SUNDAY BRUNCH - GRILLED NECTARINE, RICOTTA + PISTACHIO TOAST
Spruce up your toast this weekend with juicy seared nectarines, creamy ricotta, crunchy toasted pistachios, fresh mint and honey. This is essentially Summer on toasted sourdough and it is simply divine!
You will need:
Sliced Sourdough Bread
Ricotta Cheese
Sliced Ripe Nectarine
Pistachios
Mint Leaves Chopped
Honey
Olive Oil
Method:
Brush your griddle pan with a little olive oil.
Sear the slices of nectarine on the pan on both sides then move to a plate.
Remove the shells from the pistachios and toast on a dry pan. Then move to a chopping board and roughly chop.
Toast the sourdough.
Give the ricotta a little whisk with a fork to make it smooth.
To assemble: Spread the ricotta onto the toast. Place the seared nectarines on top. Scatter over the toasted pistachios and mint leaves. Finally drizzle with honey. Grab a coffee and enjoy x
