SUNDAY BRUNCH - ROASTED FIGS + BLACKBERRIES WITH NUTTY GRANOLA
Stay in your pyjamas, pop on a robe, take out the papers and enjoy downtime with a delicious fruit and nut brunch.
You will need:
For Granola:
2 cups of oats
1/2 cup walnuts
1/2 cup almonds
1/2 cup coconut flakes
1/2 cup dried cranberries
2 tbsp coconut oil
2 tbsp maple syrup
2 tbsp almond butter
For Roasted Fruit:
4 figs cut in half
punnet of blackberries
juice of half and orange
2 tbsp honey
1/2 nutmeg grated
Yogurt of choice to serve
Method:
To make the granola:
- Put the oats, nuts and coconut into a mixing bowl
- In a small bowl add the coconut oil and maple syrup. Pop into the microwave for a couple of seconds to melt together
- Add the oil and maple syrup to the oats and nuts mixture
- Add the almond butter and mix well with a wooden spoon
- Place some grease proof paper on a baking tray and pour the mixture into the middle.
- Using the wooden spoon spread the mixture out and press together
- Bake in a preheated oven at 150 C for 30 minutes, turning the tray around half way.
- Remove the tray from the oven and add the cranberries.
- Mix and break up the granola and allow to cool
To make the roasted figs and blackberries:
- Half the figs and arrange them in an oven proof dish cut side up.
- In a bowl, mix the orange juice, honey and nutmeg
- Heat in the microwave for a few seconds to melt and combine
- Pour over the figs
- Bake at 200C for 15 minutes
- Add the blackberries and turn them in the sauce. Then return to the oven for 5 minutes
To serve: Spoon the granola into a bowl and top with yogurt. Place the warm fruit on top and drizzle with the cooking liquid
