MOTHERS DAYS BRUNCH - EGG + BACON SANDWICH WITH ALL THE TRIMMINGS

Over the next week we will all be thinking about the amazing women who have raised us. The women who have loved and cared for us without limits. Who have nurtured, advised and supported and helped shape us into who we are today. Not forgetting all the laughs and fun times along the way. Mothers, Granny’s, Sisters, Guardians, Carers, we all know who they are.

We are lovers of Sundays and any excuse to spend them in pyjamas. We are also partial to an extra special brunch. So we are sharing the recipe for one of our favourites. This is the perfect accompaniment to a long morning spent in pyjamas. Perfect for that special person on mother’s day.

the perfect Sunday brunch. best egg and bacon sandwich

Here’s what you will need:

1tbsp hot sauce
4tbsp mayonnaise
4 medium onions
2 knobs of butter
4 brioche buns
8 large eggs
8 streaky bacon (optional)
4 slices of red cheddar 
1tbsp chopped parsley
Salt for seasoning

(Serves 4 – Always nice to have an option for seconds!)

Method:

Thinly slice onions and saute in butter on a low heat for 45 minutes until caramelised.

To make the sauce, mix the mayo with the hot sauce (I used Franks)

Fry off the streaky bacon until crisp. Sit in a warm oven while you make the eggs.

Crack eggs into a pan, add butter and break up with a spatula. When the edges begin to coagulate take off the heat and stir. Place back on the heat and cook until it’s a thick custard like consistency. 

Add in parsley and salt to season and stir.

Toast the buns, spread with hot mayo mix, add a layer of onions and then the bacon.

Divide out the eggs on top.

Place the slices of cheese on a stainless steel pan until it starts to melt but still has it’s shape.

With a spatula scoop it up and place it on the egg.

Top with the other half of the bun and serve
