SUNDAY BRUNCH - BRIOCHE FRENCH TOAST WITH PISTACHIO CREAM
Brunch just got a luxurious upgrade with our Pistachio Cream Brioche French Toast, perfect for those lazy Sundays in your favorite Moon and Mellow pyjamas. Soft brioche filled with rich pistachio cream and soaked to golden perfection in a creamy custard makes for a heavenly treat.
You will need
For the Pistachio Cream:
150g shelled unsalted raw pistachios
180ml full-fat milk
1 tbsp icing sugar
30g unsalted butter
100g good-quality white chocolate
For the French Toast:
1 brioche sliced loaf
pistachio cream (approx 4 tbsp per portion)
3 large eggs
60ml full-fat milk
30g unsalted butter
To Serve:
Berries
Icing sugar, for dusting
Method
Pistachio Cream: Boil pistachios for 3 minutes, then drain and dry using a tea towel, removing the skins (I know you're tempted but don't skip this step!). Blend pistachios with milk and icing sugar for about 5 minutes until smooth. Melt butter and white chocolate in a bowl over simmering water. Then blend into the pistachio mix until creamy.
In a baking dish, whisk eggs and milk together. Dip each slice of brioche, on one side only, into the egg mixture. Do not allow to soak for too long.
Melt the butter in a non-stick pan over low-medium heat. Working in batches, place the egg-soaked side of a brioche slice onto the pan. Spoon the pistachio cream on top and spread it evenly over the base slice. Next, place another brioche slice on top, egg-soaked side facing up, ready to flip. Cook for 3-4 minutes until golden brown, then carefully turn and cook on the other side until equally golden.
Serve It Up: Plate each French toast sandwich on a plate. Dust with icing sugar and top with blackberries.
