SUNDAY BRUNCH - BLACKBERRY CHEESECAKE CRÊPES
December has its own rules, twinkly lights, late starts, and yes, dessert for breakfast. If there’s ever a time you can serve crêpes piled with berries to a table of grown adults and nobody blinks, it’s now.
This weekend’s Sunday Brunch recipe leans fully into the season: Blackberry Cheesecake Crêpes.
They’re simple, a little indulgent and brilliant when you’ve people drifting in and out of the house over Christmas.
Crêpes
1½ cups plain flour
Pinch of salt
1 large eggs
1½ cups whole milk
½ cup water
melted butter for the pan
Blackberries
400g fresh blackberries
2 tsp caster sugar
1 tbsp water
Zest + juice of 1 clementine
Mascarpone Crème
250g mascarpone
250ml double cream
1 tbsp icing sugar
(Serves 4)

Warm the Blackberries
Add the blackberries, sugar, water, and clementine zest and juice to a saucepan. Warm gently over medium heat until the sugar dissolves and the berries are glossy and just beginning to soften.
(Try to keep the berries whole. They should be plump, not jammy.)
Make the Mascarpone Crème
Whisk together the mascarpone, double cream, and icing sugar until smooth and softly whipped.
Make the Crêpes
Put all of the ingredients into a bowl and whisk until smooth. Allow to sit in the fridge for half an hour.
Heat a non-stick pan, brush with butter, pour in a thin layer of batter, cook until golden, flip, and repeat.
To Serve
Add a spoonful of mascarpone crème onto quarter of the crêpe, spoon over the warm blackberries, fold over the other quarters, dust with icing sugar, and enjoy.
