SUNDAY BRUNCH - POACHED EGGS WITH CHILLI BUTTER BEAN CONFIT + GARLIC YOGURT
We are big believers that brunch is better served in pyjamas! With lots of orders shipped out over Christmas and new customers eager to extend their M+M lounge time over the weekend, we’re excited to share an extra special brunch recipe with you this month.
Try out these Poached Eggs with Butter Beans and Garlic Yogurt—it’s perfect for your weekend brunch plans!
Serves: 3-4 people
You will need:
- 1 poached egg per person
- 1 1/2 cups natural yogurt
- 2 cloves of garlic, minced
- Salt and pepper
- 1 can of butter beans, drained
- 3 whole cloves of garlic
- 1 lemon
- 4 tablespoons olive oil
- 2 teaspoons chili flakes
- 1 teaspoon paprika
- Herb of choice to garnish: mint, basil, or coriander
For Pickled Onion:
- 1 red onion, finely sliced
- 1 cup white vinegar
- 1 cup water
- 2 tablespoons sugar
- 1 tablespoon salt
Method:
Pickled Onions:
Finely slice the red onion and place it in a jar.
Heat the water and vinegar in a pot until simmering. Add the sugar and salt, stirring until dissolved.
Pour the liquid over the sliced onion in the jar, put the lid on, and allow it to sit and cool to room temperature or refrigerate.
Confit Beans:
Drain the butter beans and place them in a baking dish.
Add the olive oil, paprika, chilli flakes, whole cloves of garlic, 1 teaspoon of lemon zest, salt, and pepper. Mix well.
Bake at 140°C (284°F) for 30 minutes.
Garlic Yogurt:
In a bowl, mix the yogurt, minced garlic, a squeeze of lemon juice, salt, and pepper until well combined.
Poach the Eggs:
Poach eggs in simmering water with a tablespoon of vinegar.
To Serve:
Spread a tablespoon of the garlic yogurt onto each plate, making a well in the center for the beans.
Spoon the bean mixture into the well and top with a poached egg. Add another spoonful of yogurt on top of the egg, and drizzle any leftover oil from the bean mixture over it.
Top each egg with some pickled onion and garnish with your herb of choice. Serve with flatbread for mopping.
