With it being a weekend that's jam packed with chocolate, here is a brunch recipe that will help you work through those Easter eggs in the comfort of your pyjamas.

You will need: 

- 1 Ripe Banana

- 80g Brown Sugar

- 1 Egg

- 50g Unsalted Butter - Melted

- 300ml Whole Milk

- 25g Cocoa Powder

- 225g Plain Flour

- 3 tsp Baking Powder

- 100g Chocolate Chopped into Chunks

- Mixed berries (We used Blueberries + Raspberries)

- Double Cream + a Drizzle of Honey or Maple Syrup to Serve (Optional)

How to make: 

- In a large bowl, mash up the banana and mix with the brown sugar and the egg. Then add the milk and melted butter and stir

- Sift in the plain flour, baking powder and cocoa powder. With a wooden spoon, stir everything together

- Add in the chopped chocolate and stir

- Melt a little butter in a pan, spoon in the pancake mixture and place the mixed berries on top. When bubbles start to appear in the middle of the pancake flip it over and cook on the other side

- Serve with the berry side facing up, a dollop of whipped cream, a handful of berries and a drizzle of honey or maple syrup
