SUNDAY BRUNCH - HALLOUMI TACOS WITH MANGO SALSA + SPICY CORIANDER DRESSING

Gather 'round, brunch lovers! We are serving up a slice of summer with this irresistible Halloumi Taco recipe. It's a serious flavour fiesta that's salty, sweet, and spicy all in one go! We are envisaging a loungy outdoor situation, savouring our tacos in the sunshine dressed head to toe in flamingo.

HALLOUMI TACOS WITH MANGO SALSA + SPICY CORIANDER DRESSING

Makes 2 servings

YOU WILL NEED

4 Corn Tortillas

225g Halloumi

Olive Oil (for frying)

1 Ripe Mango

1/2 Red Onion

1/2 Red Pepper

2 Green Chilli's

Bunch of Coriander

1 Lime

4 Tbsp Mayonnaise

1 Clove of Garlic

1 Tbsp Grated Parmesan

Salt

METHOD

Dice the mango, red onion, pepper and 1 of the chilli's into small pieces and place in a bowl. Squeeze in half a lime and a drizzle of olive oil.

Remove the coriander stalks and keep for the dressing. Chop up the coriander leaves and add to the salsa.

For the dressing, blitz the mayo, garlic, chopped coriander stalks, parmesan, 1 chilli, pinch of salt and the juice of half a lime with a blender. Add a drop of water if it needs to be loosened up.

Slice the halloumi and fry on a griddle pan on both sides with olive oil.

Heat the tortillas on the griddle pan.

TO SERVE

Spoon the salsa onto the tortillas, top with halloumi and drizzle over the dressing.
