SUNDAY BRUNCH - COCONUT + BANANA PANCAKES WITH CARAMEL SAUCE
We are celebrating our Alex’s birthday in the studio today. And what better way to get the party started than with this bananalicious birthday brunch. Check out our celebratory coconut + banana pancake recipe. If you are looking to impress this weekend or just fancy a sweet treat, this is definitely the way to go.
You will need:
Pancakes:
4 eggs
1 cup of coconut milk
1 cup of plain flour
1 tsp baking powder
3 ripe bananas
Tub of Crème Fraiche
Caramel Sauce:
50g unsalted butter
3 tbsp golden syrup
1 cup brown sugar
150ml cream
Method:
Put all the ingredients for the sauce into a pan and melt over a low heat until the sugar dissolves. Then allow to simmer for 5 minutes until thick. Pour into a small jug and set aside.
Separate the eggs. Put the egg yolks, coconut milk and a pinch of salt into a large bowl and whisk until combined.
Sift the flour and baking powder into yolk mixture and gently fold in.
Mash 1 ripe banana and also fold in to combine.
In another bowl, whisk the egg whites to stiff peaks. Then fold everything together.
Heat a pan over a medium-low heat and some butter or oil. In batches, spoon in the batter to make approx. 10 pancakes. Cook for 2-3 minutes on each side until golden and cooked.
Slice the other 2 bananas. Stack the pancakes with banana slices and creme fraiche between each. Drizzle with caramel sauce on top and serve with a jug of extra sauce on the side.
