SUNDAY BRUNCH - FRENCH TOAST ROLLS WITH MASCARPONE + BERRIES

Here is an easy treat dressed up as a brunch. Super yum, especially served in your pyjamas. The images shows our version using raspberries and blueberries and features a glimpse of our new Bow Cami Set in Leopard Navy. Perfect attire for an El Fresco brunch with friends.

 

Here's what you will need:

Slice pan
Eggs
Drop of milk
Berries of choice. We went raspberries + blueberries
Mascarpone
Drop of olive oil and a knob of butter
Drizzle of honey and dusting of icing sugar
(Servings 2-3 rolls each. 1 egg make 4 rolls and there are 5-7 berries per roll)

Method:
Take a slice of bread and remove the crust.
Spread the mascarpone on one side leaving a small gap at either end for folding.
Place the berries in a row down the centre.
Roll it up and with the folded edge facing down give it a slight press to hold everything in place.
Crack the egg/eggs into a wide bottom bowl and add a drop of milk to thin it out slightly.
One by one toss each one in the egg mixture.
Heat a drop of olive oil and a knob of butter in a pan. Place the rolls fold side down into the hot pan to seal everything first the turn to brown each side (4 times)
Ho serve drizzle with honey. A dusting of icing sugar makes it look good too.
