We love any excuse to spend Sunday's in pyjamas and are partial to extending our mornings with the papers and a tasty brunch. There is no better way to catch up with family and friends than over delicious food in your comfies. Last week we made the best lamb burgers stuffed with blue cheese and we are still dreaming about them. They are like heaven in a bun!

The best lamb burgers, Sunday in pyjamas, Sunday brunch, food for the soul

Here’s what you will need:

1lb of lamb mince
1 onion finely chopped
1 clove of garlic minced
1 egg
handful of bread crumbs (1 slice blitzed)
4 cubes of blue cheese
olive oil
accompaniment : burger buns, mixed lettuce, caramelised red onions, mayo + tomato relish


Sauté the chopped onion and garlic in olive oil for 6-7 minutes until soft and set to one side.

In a bowl mix the mince, egg, breadcrumbs, onion mixture, salt + pepper.
divide the mixture into 4 or 5 balls.

Take a cube of blue cheese and press it into the centre of each burger ball and pat the meat over the top so that the cheese is in the middle and is completely covered by the lamb mixture.

Place on a plate in the fridge for half an hour before cooking.

Cook on the bbq or fry.

To serve - toast the buns on the bbq. Put tomato relish on one side and Mayo on the other. Add mixed leaves and caramelised onions and place the burger on top.
